Citrus Salad

Colorful with pink grapefruit, orange orange and green kiwi, you just feel good eating it.  The dressing is a cousin to a Catalina and a perfect match for the fruit and the peppery greens.

This is a recipe that I posted when I first started blogging. Back when I had like minus two readers. Plus it was hiding behind a great little BLT Cheeseburger, so could have went unnoticed. Anyway, I served it this week with some little sliders and it’s just so good I wanted to share the recipe again, with the spotlight completely on the salad.

Combing greens and fruit, this makes a great side dish.
Recipe type: Fruit Salad
Serves: 4
Ingredients
  • Citrus Salad:
  • 2 Kiwi fruit, peeled and quartered
  • 1 orange, peeled and sliced in rounds
  • ½ grapefruit, peeled and sliced in rounds
  • mixed greens
  • Pineapple is also great on this salad.
  • Dressing for Citrus Salad:
  • 3 Tbs extra virgin olive oil
  • 1 Tbs ketchup
  • 1 Tbs honey
  • 1 Tbs cider vinegar
  • ½ teaspoon salt
  • ½ teaspoon Dijon mustard
Instructions
  1. For the dressing, mix all ingredients in a jar and shake until well blended. Drizzle over mixed baby greens topped with fruit.

      My mom would always make a salad for dinner and place three bottles of dressing on the table; Thousand Island, Catalina and Ranch. I’d always grab for the catalina.

    And I know I’ve said this before, but will repeat: I love your new layout. The header is unusual, colorful and even has texture!

    Citrus salads are a favorite at my house. I like the tasty vinaigrette. Some of our best recipes were the ones we first posted.

    Being one of your original readers, I’m so glad you brought this one back – such a great recipe and so pretty. (eating lots of colors is important) Citrus is a favorite of mine any day and the dressing sounds delicious.
