Shrimp and Scallops with Orange Cream Sauce served over Angel Hair Pasta, is one of our favorite seafood pasta recipes.
A search on the internet will produce a zillion recipes, but sorting through them to find a great recipe can be a task.
My favorite way to find new recipes is through conversation. Simply asking “What’s your favorite thing to cook”? I love hearing the passionate descriptions and the history that comes along with the recipes. Every once in a while you’ll get a reply of “I don’t like to cook”. Bingo! Even better yet. Prying these people can produce some real gems.

Some of my greatest finds come from being invited into someone’s home for dinner. Such was the case last weekend when we were invited over to friends Greg and Cauleen’s. On the table were shrimp and scallops that were lightly floured, then seared and mixed with this decadent orange cream sauce. Spoiler alert, Vermouth is the secret ingredient to make this sauce special. Served over angel hair pasta, this restaurant quality meal was a dinner party treat.
And speaking of Angel Hair Pasta, I’d like to go on record that I think Angel Hair Pasta is under rated. I think it’s an elegant choice, a delicate pasta that seems to soak up more flavor that most pastas.
- fresh lemon juice
- 12 jumbo shrimp peeled and deveined
- 16 sea scallops
- all-purpose flour
- 4 tablespoons butter
- 2 shallots fine chopped
- 2 cloves garlic chopped
- 2 tablespoons butter
- 1/4 cup dry vermouth
- 2/3 cup orange juice
- 1 cup heavy cream
- 1/2 t . dried basil or 4 fresh leaves chopped
- 1 tangerine cut into wedges
Squeeze a little lemon juice on shrimp and scallops; toss them lightly in flour. In a large skillet, saute shrimp and scallops in 4 tablespoons butter. Set aside. In another skillet sauce shallots and garlic in 2 tablespoons butter. Pour vermouth over shallots and reduce by 1/2. Add orange juice and reduce by 1/3. Add heavy cream and cook mixture for about 10 minutes. Add basil, shrimp and scallops. Heat quickly and serve over angel hair pasta. Sprinkle tangerine slices over each serving.
