This month’s SRC Assignment found me sneaking around over at Amy’s Cooking Adventures.
Rise and shine. How about a steak and egg sandwich? This is a ground steak burger patty on top of a toasted English muffin, with some cheese melted on top, then topped with an over easy fried egg and a couple good shakes of hot sauce. It’s accompanied by some potato wedges that have been salt and peppered, oiled, sprinkled with smoked paprika and roasted.
Not exactly a super model dish to photograph…using leftovers, this Steak and Potato Omelet made for a delicious Sunday breakfast.

While reading this recipe, I said to myself right from the get-go ”Use pork instead of steak”. But Better Homes and Gardens has been such a trustworthy resource over the years, I decided to stick to their recommendations.
It was really pretty good. I love the idea of steak, love the idea of peach steak sauce, love the idea of topping with peach slices and as far as I’m concerned bacon goes with ever-y-thing. The flavors are so good on their own, but seemed to compete a bit with each other when all brought together.
Thinking about Salisbury Steak inspired me to make this Southwestern version. I wasn’t all that impressed with my gravy, but I did love my pickled onions for a topping. I’ve blogged about these tangy sweet wonderful onions before and you can find the recipe at this link.
I had a clam shell of an arugula and spinach mix that needed to be used, penne in the pantry and this recipe bookmarked for months, so no time better than the present to have it for dinner.
