Swiss Chard Tacos, Texas Brew Salsas, and a Giveaway

Well heck, this has been a couple of rough weeks for me. An inner ear situation has caused balance issues making me dizzier than all get out. Resulting in; missing four days work, numerous tests and trips back and forth to the doctor, not being able to drive, not being able to cook, no appetite and cancelling a trip to Portland to the IFBC (Food Blogger Conference), which I’ve had planned since March. No need to feel sorry for me, believe me, I’ve done enough of that for all of us.  :)

Hopefully this latest experiment of medication has me back in the saddle. For the first time in two weeks, I’ve planned for a big juicy steak from the grill for dinner…and it actually sounds good. I believe things are looking up.

But for now, let’s talk about a fabulous salsa find, a very generous Brenda from Texas Brew Salsa Company and a giveaway.

Swiss Chard Tacos with Caramelized Onions
Simple and savory, these tacos are a delicious surprise.
Recipe type: Southwestern
Serves: 6
  • 1 bunch Swiss Chard
  • 1½ T. olive oil
  • 1 whole sweet onion, sliced ¼ inch thick
  • 3 cloves garlic, minced
  • ½ t. red pepper flakes
  • ½ C. chicken broth
  • salt
  • 1 cup crumbled Mexican Queso Fresco
  • ¾ c. Texas Brew Honey Roasted Chipotle Salsa
  1. Cut the chard crosswise into ½ inch slices. In a large skillet, heat the oil on medium high. Add the onion and cook, stirring frequently until golden brown but still crunchy, about 5 minutes. Add garlic and red pepper flakes and stir for a few seconds, until aromatic. Add broth, salt to taste and the greens. Reduce heat, cover, and cook greens until tender, about 5 minutes.
  2. Uncover pan and raise the heat to medium high and cook, stirring continually until mixture is nearly dry.
  3. Serve with warm corn tortillas, crumbled cheese, salsa, cilantro and raw sliced onion rings.

    I couldn’t wait to read this to see what a chard taco might be – It actually sounds good. I’d always go with the chipotle one. My daughter lives in the S.A. and I’ll see if she knows of it.

    I haven’t been able to have swiss chard all summer (thanks to blood thinners after my surgery) but I just planted a bunch of fall greens and hope to be enjoying them by late September. This recipe looks perfect for my first harvest!

    I would love to try the honey roaster chipotle just sounds so yummy, would roast up some chicken or steak and slap it on..would love to get some too, from mary jane s. at!!!!!!!!!!!!1

    Is this where the term “dizzy blond” comes from? 😉 Seriously…I’m so sorry you went through this. That could not be fun and I know you were looking forward to the conference.

    I would go for the mango…just because I love mango. But the chipotle also is appealing.

    ahhhh so sorry you have been sick and had to miss the conference!!! Boooooo! I think the honey roasted chipotle sounds awesome! So does swiss chard in the tacos … I have some of that in my garden so I will have to give this a try! Hope you are feeling better!

    Oh Lea Ann I am so sorry about your inner ear problem and having to cancel your trip! I hope you are better now. My mother had a problem with her inner ear so I know how terrible it can be.

    I too am sorry to hear about your inner ear problem. That sounds very uncomfortable and I hope you’re better now. My husband jokes that if I’ve lost my appetite, I must be really, really sick.

    Great give-away. They all sound good, but I’m always looking for new ways to use chipotle.

    Oh no! I hope that medication works and you feel better soon!! I made these tacos not too long ago and they are the best though I’m sure they’re even BETTER with that salsa to decorate them!

    Yikes, Lea Ann, I do feel sorry for you. There is nothing worse than an ear ache. I hope you will try next year to make it to Portland. Although I feel like I already know you I would love to meet in person and swap foodie stories.

    Yikes – I have had vertigo issues in the past, but not like that. I hope you’re feeling better! I love the idea of tacos with chard in them and I’d have to drizzle the Honey Roasted Mango on mine. I liked Texas Brew on Face Book – I’ve been “liking” you for a long time, woman! :-)
