2-3TablespoonRed wine vinegar
1teaspoonGround cumin
2teaspoonsDried Mexican oregano
1/8teaspoon New Mexico Red Chile Powderor ancho
215 ounceCans black beansrinsed & drained
1 ½CupFrozen Cornthawed, or fresh corn that's been blanched
1CupRed onionchopped. Or sweet yellow onion
1 ½CupFresh tomatoesseeds removed, chopped
1CupChopped green pepper
salt and pepper to taste
Instructions
Mix all ingredients together in a large bowl. All are estimates, nothing has to be exact. Taste, adjust flavors and serve with chips. Or over grilled chicken.
