Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable shortening Crisco
  • 1 cup sugar
  • 1 cup banana very ripe and mashed
  • 1/2 cup buttermilk
  • 2 large eggs
  • 3/4 cup pecans -- chopped

Instructions

  • Sift flour, soda and salt together. Cream shortening and sugar, add eggs and beat until fluffy. Add dry ingredients and mashed bananas and buttermilk. Add 3/4 cup nuts.
  • Turn into greased 9 x 5 or 9 1/2 x 5 1/2 oaf pan. Bake 350 degrees 60 minutes or until inserted toothpick comes out clean. Oven temps vary, so start checking doneness after 45 - 50 minutes.
