Classic Macaroni Salad

Ingredients

  • 4 cups uncooked elbow macaroni
  • 1 C . mayonnaise
  • 1/4 C . white vinegar
  • 1/3 C . organic sugar
  • 2 1/2 T . yellow mustard
  • 1 1/2 t . salt
  • 1/2 t . pepper
  • 1 large sweet onion chopped
  • 2 large stalks celery thin sliced
  • 1 bell pepper orange or green
  • 1 medium carrot peeled and shredded
  • 1 small jar pimentos drained

Instructions

  1. Bring a large pot of salted water to a boil. Add the macaroni, and cook according to package directions.. Rinse under cold water and drain.
  2. In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni.
  3. Refrigerate for at least 4 hours before serving, but preferably overnight.
