Guacamole Grilled Cheese Sandwich with Pesto and Fontina

This unique combination of Guacamole, Pesto and Fontina Cheese make a beautifully flavored grilled cheese sandwich.

Ingredients

  • 4 slices bread
  • Butter softened to room temperature
  • 2 tablespoons pesto
  • 1/4 cup guacamole
  • 1 cup Fontina Cheese grated

Instructions

  • Spread butter on the slices of bread. Turning two slices over to expose the naked side, dividing the ingredients between two sandwiches, first spread on the pesto, then the guacamole and sprinkle on the cheese. In a non-stick fry pan that's been heated over medium high heat, place the sandwiches butter side down. Turn when one side is golden brown and brown the other buttered side.
