This is a recipe for a guacamole grilled cheese sandwich. This unique combination of Guacamole, Pesto and Fontina Cheese make a beautifully flavored Southwestern sandwich.
I thought exactly same thing as you’re thinking. When the sample girl at Harmon’s Market offered us a bite of a Guacamole, grilled cheese sandwich with pesto and fontina, I said, “Really? I would have never thought of putting those flavors together.”
And when I announced that I was making this sandwich as I purchased my Fontina cheese at the cheese counter here at home, the cheese lady remarked, “Really? I would have never thought of putting those flavors together!”
Only food obsessed people would take a portion of very limited weekend time to tour a grocery store. Aside from the blogger conference, Heather and I had two missions with our spare time in Salt Lake City, visit the Mormon Tabernacle and hear the Mormon Tabernacle Choir and Harmon’s Grocery Store. Hailed by locals as a unique experience, we Ubered over and found ourselves wandering through a 50,000 sq. ft. fabulous upscale market in downtown Salt Lake.
Harmon’s has a very similar feel and vibe as Whole Foods but not so obsessed with every single item being organic. Yes, you could buy a can of Manwich at Harmon’s. I liked that about Harmon’s. And just like Whole Foods, Harmon’s offered samples as we turned the corner at each aisle.
This sandwich came together in a breeze by purchasing pre-made guacamole and pesto. And if it were Summer time and I had a counter full of glorious fresh sweet tomatoes and stalks of fresh basil, I would have made my own guacamole and pesto. Both are extremely easy to make.
This was a fabulous fun meal for a snowy Colorado night. Even though the calendar indicates that it is Spring, Denver had a bit of a weather event over the past couple days. A blizzard to be exact. 20 inches of snow, 35 mph winds and yes-siree we were snowed in for two days.
This photo is as far as I ventured out of the house, standing at my front door and looking out through the entry. Perfect guacamole grilled cheese sandwich and tomato soup weather if you ask me.

Guacamole Grilled Cheese Sandwich with Pesto and Fontina
- 4 slices bread
- Butter softened to room temperature
- 2 tablespoons pesto
- 1/4 cup guacamole
- 1 cup Fontina Cheese grated
- Spread butter on the slices of bread. Turning two slices over to expose the naked side, dividing the ingredients between two sandwiches, first spread on the pesto, then the guacamole and sprinkle on the cheese. In a non-stick fry pan that’s been heated over medium high heat, place the sandwiches butter side down. Turn when one side is golden brown and brown the other buttered side.
