Once I get started on that sweet corn train, I can’t stop. And I can’t stop buying it from our Farmer’s Market, LuLu’s Farm. Colorado grows some mighty fine super sweet white and yellow corn and the farmers who grow it credit it’s beautiful flavor to cool nights and hot days. Sounds like a wine maker talking doesn’t it?
For this beautiful side dish, just remove the kernels from fresh sweet corn, add some butter and Microwave. Top with avocado and a sprinkle of cilantro and red pepper flakes and BAM – done.
Can I use frozen corn for this? Absolutely! Frozen vegetables are flash frozen as soon as they’re picked. And some vegetables like frozen corn and peas are just as delicious as fresh.
So don’t deprive yourself during the Winter months of this lovely Southwestern Sweet Corn side dish. Better to buy frozen than sub-par fresh vegetables that aren’t in season.
Easiest Summer Side Dish ever.
- 3 ears fresh sweet corn kernels removed
- 1 tablespoon unsalted butter
- salt and pepper to taste
- 1 avocado sliced or cubed
- 1 tablespoon chopped cilantro
- 1 dash red pepper flakes
In a microwave safe dish, add the corn kernels. Top with butter and microwave on high 3 - 5 minutes.
Remove from microwave and add salt and pepper to taste, stirring to blend.
Transfer to a serving dish and add avocado, cilantro and red pepper flakes.
