Time has come for our April Blogger’s Clue Event. I look forward to sneaking around every month with this group of bloggers. Blogger’s Clue is a monthly party created by Liz over at That Skinny Chick can Bake. For each assignment, we’re given a clue, and a blog and we’re to take that clue and find a recipe to make. This month we’ve sprung into Spring and we’re to find a recipe that reminds us of flowers blooming, fresh air blowing the curtains and puffy clouds marching across the blue sky. Anything that reminds us of Spring.
For me that means dusting off the grill for a steak or burgers and stirring up some potato salad or cole slaw. One thing I love about Blogger’s Clue is the opportunity to take a step out of that box and try new things. Being very proud of my original potato salad recipe, this is a big step out of that box for me. And a delicious one at that.
Who can argue with potatoes, bacon, sour cream and blue cheese, It’s a far cry from my mayonnaise, celery and mustard version, but will make it’s way into my permanent data base and on my table many times this Summer. What great creamy flavors.
But wait, I’m so excited about my find, I almost forgot to give credit where credit is due. I was assigned to Kate’s Kitchen this month. Kate has been blogging for a long time, so the choices were hard. I was torn between her Lemon Brined Chicken, her Spring Shrimp Pasta Salad and the numerous Asparagus recipes she offered. But those darn potatoes always win out with me.
Give this one a try, it’s creamy, tart and perfect.
- 10-12 new potatoes
- 1 c sour cream
- 2 T milk or mayonnaise
- 1/4 t white wine vinegar
- salt and pepper
- 2 T parsley chopped
- 3 green onions sliced
- 1/3 c toasted almonds
- 3 eggs hard cooked and chopped
- 4 oz blue cheese
- 4 slices bacon cooked and crumbled
This is one of those toss in and mix it up recipes. Just don't toss it all together too long before you serve it or the almonds might get a bit soft. Change the measurements around to suit yourself. Use a different kind of nuts or cheese or salami instead of bacon. Really, it's that forgiving a recipe!
