Man, I’ve had so many good soups it would b a big job to pick a one as being the “best I’ve ever had in my life”. This is Colombian Soup Recipe would make it to the top ten, oh, probably even the top five. Chicken and potatoes? Who can resist. Let’s take a look.
Creamy Chicken Soup With Potatoes
What makes this soup creamy? Whenever you cook potatoes in any liquid the starch from the potatoes will thicken and make a creamier richer soup base.
And did I mention there’s heavy cream involved in this recipe? Just enough to swirl in at the end to take the texture and flavor over the top.
And could making soup get any easier than using a flavorful rotisserie chicken?

What is Ajiaco Soup?
Googling Ajiaco took me to Wikipedia which tells us it’s usually made with three different varieties of Colombian potatoes and can be garnished with a chunk of corn on the cob.
Ajiaco Soup is a popular traditional dish in Bogoto, Columbia. The Capital city of Columbia. This version is Americanized and simplified by using a rotisserie chicken. Since I’m making this with no seasonal sweet corn available, I’ve omitted it. Frozen kernels of sweet corn may be added to add to its authenticity.
It’s pretty simple stuff. In a pretty delicious way. Let’s take a look at this rotisserie chicken soup with potatoes.
Tips To Making This Soup Even Better
- Rotisserie Chicken, The skin is where the flavor is. After all, a rotisserie chicken is heavily seasoned with some pretty impressive flavors. Remove a lot of the skin, but leave a few chunks in just for that added flavor. You can always fish those pieces out before serving.
- Simmer this soup with some of the larger bones swimming in the broth. Remove them at the end. Again, with any meat dish, the bones add so much flavor
- The toppings. After the soup is dished up, add in a swirl of heavy whipping cream and here’s where the real party starts…The toppings add all the excitement and move this simple soup right up into the excellent category. Cilantro, avocados and drumroll please for capers. A big delicious wow.
- Try Mexican Crema. This recipe calls for heavy cream for drizzling. If you’ve never purchased Mexican Crema, this is a good time to give it a try. It’s thicker than heavy cream, but not as thick as sour cream. It’s delightful and works very well in this recipe for a creamy rotisserie chicken soup.
The savory roasted flavor of rotisserie chicken meat and skin gives amazingly rich and delicious flavor to this soup. It’s a depth of flavor that just isn’t achieved with non-roasted chicken.

Ajiaco, Colombian Rotisserie Chicken Soup with Potatoes
Ingredients
- 1 large onion chopped
- 1 tablespoon olive oil
- 6 cups chicken broth
- 1 whole rotisserie chicken
- 4 medium potatoes peeled and cubed
- 1 1/4 tsp salt
- 1 1/2 tsp pepper
- 2 tsp dried oregano
- Accompaniments:
- Cilantro
- Heavy cream Mexican Crema even better
- Capers drained
- Avocado chopped
Instructions
- In a Dutch oven, saute onion in small amount of olive oil. Remove most of the skin from the chicken and remove from bones. Keep a couple of the large bones for the soup and remove later. It will add more flavor. Add chicken pieces, chicken broth and three cubed potatoes. Add spices and simmer until potatoes are tender. Grate one potato into soup mixture, simmer until tender.
- Dish up the soup, swirl in the cream and sprinkle on cilanro, capers and avocados.
