Easy Cheesy Chicken

Whew! I’m out of breath. Busy, busy, busy at work coupled with a quick road trip back to Kansas to celebrate Mom’s birthday hasn’t left much time for me to blog or to even read yours. Just so you don’t forget about me, here’s a quick meal that allowed me to cook during all of the hullabaloo.

In spite of our 12 inches of snow a couple of days ago, it is Springtime in the Rockies. I love this time of year in Colorado. Our big spring snows followed by 65-degree days equal quick melts revealing green grass that wasn’t there before the snow, irises poking up through the dirt and a Weber grill that has come out of hibernation.

So let’s grill some chicken.

This is a throw-together meal using ingredients I had on hand. No recipe required. I call it Easy Cheesy Chicken…

I simply pounded a couple of chicken breasts with my meat mallet to an equal thickness. Sprinkled with Mexican oregano, salt and pepper I threw them on my pre-heated grill…

Meanwhile, I sautéed some sliced green onions in a butter and olive oil mixture…

Whisk in some milk and shredded cheddar cheese…

Add enough cheese to obtain that ooey-gooey consistency. Add a couple of tablespoons of your favorite bottled salsa…

Add a few shakes of handsome (and well dressed) Mr. Tapatio Hot Sauce.

Plate the chicken, drizzle on some of the ooey-gooey cheese, top with a beautiful handful of cilantro and voila!  Easy and cheesy.

So, let’s talk about Spring. Spring’s is a great time for us.  As you know, we’re avid birdwatchers and the miracles of migration are about to unfold all around us. Birdwatching is our favorite spring activity…what’s yours?

Did I mention there is another foot of snow in our forecast for this afternoon?  Which will make for some grumpy little migrants.

    Yea, you’re back!!! This looks easy and delicious – two very important criteria on weeknights.
    As for spring – we are currently watching a great horned owl nest that she conveniently built on an osprey platform near the road. Our migratory birds are starting to show up as well and we’re noticing them while we cut down trees and get the garden ready. LOVE getting outside again!

      Perfect nest platform for a GHO.  They start nesting in January so you should be seeing babies by now.  I always think they look like dryer lint.  Anyway, they should be out of there by the time those Osprey return.  I’m not quite at the “getting outside” stage yet.  Still too much weather going on, but at least that grill has been faard up.  (translation:  fired up)

    Geese are flying over my house daily now, saw first robin, finches are more active, and I’m listening to the cardinals…That chicken with rice would be a treat!

      hmmm, trying to think about your location.  I bet you have Greater White-fronted, Snow and Canada Geese over head.  Wonder if your finches are Purple or House.  Colorado doesn’t have Cardinals.  We’ve really been cheated on that one.  I’ve even seen people get mad when they move here and figure that out.  I love that ringing song of theirs almost as much as I love that brilliant red.  And see, I told you those Robins were headed your direction!  :-)

    I’ve been wondering where you’ve been, hope you had a nice trip. I’ve been to Colorado in the summer and the winter so I’ve seen it brown and white, but never green. The chicken looks simple and delicious.

    Welcome back! I broke out the grill a few weeks ago, then it got buried under snow. But that’s all better now, and I can’t wait to get grilling! Or should I said i can’t wait to make my husband get grilling 😉

    And just to clarify, you *did* say 12 inches of snow, right? That’s not metric or anything, is it?

    And next time you’re in Kansas, let me know and we’ll do coffee 😀

      LOL, 12 inches a few days ago, and 12 tonight.  It’ll probably end up in Wichita in the form of a great thunderstorm!  Lots of moisture.

      Kansas was just fine and dandy!  I ws a little surprised things weren’t greening up yet.  Windy.  I visited my favorite little market that I can’t wait to blog about.

    I’m sitting here watching the weather channel while I read the paper and it looks like winter has slipped back into Denver – more moisture for a green spring.

      We’ve got 12 inches so far and it’s still snowing.  And by the way, we’ll have to shovel to find our paper.  I’m sure it’s out there somewhere buried.
